Chef Binod Baral - Time to think and debate about self sufficient

PM Oli is talking about thousand Dollars of Turmeric, I'm not talking about Millions, I'm talking about Billion Dollar of Gaja ( Marijuana ).

Why not Nepal legalised and regulated cannabis farming export for medical use in bid to beat current economic crisis.

It must be best and different kind from Himalayas , Mountainous and Terai Region.


Research reportedly estimated that the industry could generate as much as $1bn annually.

Norway, the Netherlands and Portugal - it is legal to consume small amounts of marijuana.

In Australia, Puerto Rico, Poland, Czech Republic, Canada, Croatia and Macedonia it is legal for medicinal purposes in some form, and in Turkey for the cultivation for the same purpose.

In Uruguay, Spain, Slovenia, Netherlands, Jamaica, Columbia, Chile and the US states Alaska, California, Colorado, Maine, Massachusetts,Minnesota, Maryland, Mississippi, Nevada, New Hampshire, New York, North Carolina, Ohio Oregon and Washington, Rhode Island, Vermont it is legal or decriminalised in some form.


In Arizona, Connecticut, Delaware, Florida, Georgia, Hawaii, Indiana, Iowa, Louisiana, Michigan, Montana, New Jersey, New Mexico, Oklahoma, Pennsylvania and West Virginia marijuana is legal on medical grounds.

Canada legalised Marijuana.

Community Development Center UK -COVID19 relief notice

Inspired by the initiative taken by our Nepalese temple, Pashupatinath, Southeast London, we would like to inform that, with the aim of providing relief to the Nepalese students and Nepalese elderly people, who are facing difficulties due to the global pandemic Coronavirus (COVID-19), Community Development Center -UK (CODEC-UK) will be organising a  food distribution support project while maintaining a safe distance. This will run every weekend on Saturdays and Sundays until further notice.

On 8 May 2020 India inaugurated a road which was built to Kailash-Mansarovar via Nepal's territory Lipulekh without permission of Nepal. It then started to become tense between Nepal and India, meanwhile Indian medias, Army Generals and bureaucrats have been giving their views and have been disrespecting Nepal and it's people. In the middle of all this tension a 15 year boy sent a letter to the Prime Minister of India Narendra Modi.

Globalisation Nepalese Heritage food campaign

You don’t have to ‘Like’ or send ‘Comment’ to my Facebook status, but I request you to read it. 
To me FB is not a showcase but a forum in which I share my experience and businesslike practical knowledge. 
Through FB, with a support from our Nepalese Chefs, I had launched the Globaluzation of Nepalese Heritage Food campaign which was a big success. 

This time after Pandemic I am trying  to promote Nepalese ethnic Immune Boosting Drinks and Cuisine to step-up our tourism. I am not a chef, but I can play a catalyst. Here I got a very encouraging response from a best known International award wining Nepali Chef Binod Baral. He sent me his views which could be helpful for introducing typical Nepalese ethnic  “Immune  Boosting  Drinks and cuisine. 

I sincerely request all Nepalese Hotel and Restaurant owners  all over world, to think about Ethnic gastronomy which could be an effective booster to rescue and upgrade the culture and quality of post pandemic tourism.

I have been travelling a lot for food and work with so many foodie globally.
First of all, we need passion on food, and it’s start from produces from farm, using coking technique, telling story about food also important and its health benefit now a days.
We have one of the best Yoghurt I it right start from breakfast to all day drinks ) – JUJU DHAU
We have various varieties of spinach, I never see that much in any country,  Bethe ko saag to Pharsi Ko Munta 
Herbs and spices from Himalayas to Terai Mugrelo to Timur 
We one of the richest water source that mean local fishes - why trout why not Jalakapur or Shahar 
English Mustard can be best in world – why not from Tokha 
Basmati rice can be best in world by not Pokhreli Masina
Why Dosa – why not Chatamari 
Why Kebab – why not Sekuwa /Poku
Why Dumpling – Why not MOMO
Why Cornflake / Cereal – why not Chiura / Moori
Why Protein Powder – Why not Sato 
Why Donut – Why not Sel Roti / Malpuwa 
Why Foreign Whisky and Liquor – why not Local Raksi / Chyang/ Tomba  best may be organic )
New Zealand / Wales lamb is so popular worldwide why not Chyangrya from Manag Mustang or water buffalo from Pahad (again we have to follow current trends like organic) 
We have so much Nose to Tail dishes from Newari Kitchen, we just need to bit of work (Product improvement to make palatable for everyone including tourist). We need to get confident from them and best way to do is right cleaning, right PPE, open plan kitchen, staff training, personal hygiene and bit of marketing and storytelling from government. Long story short it has to be first locally and globally.

Following are the culinary tips that I have copied from well known cookery book. Please check it. I request all our great chefs to develop their own choice of recipes. 
* Honey is rich in antioxidants and is often used to soothe sore throats. It adds a natural sweetness to the drink.
* Lemon juice is very high in vitamin C and can help to support heart and digestive health.
* Orange juice is naturally high in vitamin C, folate and potassium, as well as being a great source of antioxidants.
* Garlic is known to boost the function of the immune system, and in studies it has been shown to reduce the symptoms of a common cold.
* Ginger has a very long history of use in traditional and alternative medicine. It has been used to help digestion, reduce nausea and help fight the common cold and other illnesses, to name a few. It also gives the immune booster shot a little zing.
* Cayenne has many health benefits that is a result of the active component, capsaicin. It can boost metabolism and lower blood pressure.
* Turmeric is a great anti-inflammatory and antioxidant.
* Black Pepper is used to activate the curcumin in the turmeric.
* Apple Cider Vinegar can kill harmful bacteria.

Nepalese Food Recipes Competition

The Basics:
we are judging the recipe, not the Chef, so you may submit as many as you want. We judge those entries, make the recipes of the top contenders, and select seven winners. All accepted entries are displayed on the site along with your name and short bio that you submit with your recipe.

Judging:
Recipes are judged on originality (30%), ease of preparation or instruction clarity (30%), and overall appeal (40%). No preference is given to what kind of dish it is. An appetizer/starter/snacks or dessert can win just as easily as a main course. The lead judge panel are group of five well known nepalese chefs and hospitality education provider.

Legal Stuff:
This competition is open to all nepalese chefs and culinary students from around the globe. Recipes must be your originals, though they may be previously published by you elsewhere. The copyright for your entry shall remain your property, but your submission to the contest constitutes your irrevocable and perpetual permission and consent to use, reproduce, and publish, transmit, distribute to the all culinary institution and commercial trade.
Please note winner's  recipes may go to the many Hospitality institutions, commercial trade place as promoting Heritage Nepalese food in National and international market through government body, HAN and REBAN.
This is not a lottery or sweepstakes and winner are not selected at random, but only by the review as described herein of the appointed judges, who will be announce later.

Appetizer/starter/snacks Catagories:
Rs. 15,000 each for 4 winners.(must have 2 recipes)

Maincourses ( meat/ poultry/fish/game or vegtables) Categories:
Rs. 20,000 for 3 winners.

Guidelines
Serving Method & Presentation: Fresh and colorful, easy to eat closely placed items for maintaining tempereature, hot/cold serving plate, stylistic but practical.
Portion Size and Nutritional Balance: 35/65 balance protein and carbohydrate. Weight boundary within the tolerance of total meal. Nutritional breakdown supplied.
Menu & Ingredients Compatibility: Do the recipe ingredients compliment each other in color, flavor, and texture? Are the ingredients balanced in size and amounts?.
Creativity & Practicality: Is the dish creative, showing something new or an old idea modernized? Can the dish be prepared for a party of 40 or more?.
Flavor, Taste, Texture & Doneness: Do the specified major ingredi- ents carry the dominant flavors? Do the componets fit together? Are the temperatures correct? Do the textures reflect the cooking technique? is the sauce the correct consistancy and smooth?.
The following factors go into writing a recipe — it must have:
1.  A title                                        2. Number of servings and    serving size
3. Ingredient list                           4. Preparation method
